Jivko was previously in the restaurant business and co-founded a restaurant called So Kitchen. The idea for the restaurant was born out of a catering project that Jivko and his friend, Vaseline, started. They imported organic food from different European countries and began delivering vegan food for lunchtime. They shared the idea with their friends, and with the help of a partner who invested in the project, the restaurant was born.

In the beginning, it was challenging to get the word out and start getting customers. Jivko used Facebook and word of mouth to spread the message about the restaurant. It was the first vegan restaurant in Sofia, Bulgaria, and the concept was high quality, gourmet food that was completely plant-based. Jivko emphasized the importance of using high-quality ingredients, which can affect profit margins. He explained that the margin depends on the kind of ingredients used and the restaurant's pricing strategy.

So Kitchen is still in existence, and Jivko was involved in the project from 2012 to 2020. However, he decided to focus all his efforts and energy on Ancestral Superfoods because he saw the potential for the project to go global. Jivko's goal with Ancestral Superfoods is not just to produce plant-based functional foods, but to also reach out to others and help them with his experience.
